WHere is a simplified interpretation of a beverage featured on the seasonal menu. It's a batch pre-mixed which is loaded with the flavours associated with Christmas time, making it perfect for your celebration. Reserve the remaining citrus syrup for morning drinks, desserts, or to make another batch of this cocktail.
Bikini Recipe
Serves 10 people
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Place every components in a pan, bring to a light boil, mixing so the sugar melts. Then, remove from the burner allowing it to cool down completely. Transfer to a clean bottle, cap it and refrigerate it in the refrigerator, it will last for around one month.
To make Cocktail Base: Combine the specified liquids into one big jug, let it rest for 60 minutes, then filter it preferably using cheesecloth, so it's fully clarified.
To serve: Measure 85ml of your cocktail base to a mixing glass packed with ice, and agitate gently for one minute to chill. Strain to a chilled martini glass or similar, garnish with the cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
